ReplyDeleteOther than peanut butter, I'd say my biggest comfort food is mashed potatoes with gravy. We've recently tried mashed cauliflower and have found it to be a nice substitute for mashed potatoes (without the gravy, please). After cauliflower has cooked very tender, whip it up pretty much just like you would potatoes. I like to add in a good melting cheese like american or velveta for extra flavor and creaminess. Comfort food to me is biscuits slathered in butter and macc & cheese...real healthy, huh...LOL!!!
ReplyDeleteI'm starving now, guess I'll head to the pantry for some some peanut butter and jelly, it's ok though, I'll have it on WHEAT bread! :)
(No really, we are also trying hard to eat healthy, but it takes some creativity, time, and is definately more expensive...but well worth it!)
I would love to have a big bowl of chili!! It looks so good,and healthy too.

ReplyDeleteWanna try making one with a new (er actually OLD crust),,,Try this recipe for the crust sometime:
2cups and just a "Titch More ---like a tablespoon White OR Wheat Flour
3/4cu Vegetable Oil
1/4 cu Milk
1/4teaspoon Salt
Pour the flour in a small mixing bowl/Stir in salt.
Then,,
Mix the Vegetable Oil and milk together in a measuring cup or small bowl (I use a Pyrex one cup measure)
Pour Oil/Milk Mixture into flour and stir until it sort of "solidifies."
Roll out between Plastic Wrap of Waxed Paper (Makes two crusts or one for 13x9 Pan)
(Bake as you would any pie/Sweet or savory)
This was my Mom's old recipe,,they used to make it during the Depression when Lard was scarce. It's fast and easy and just plain WEIRD how it starts out kind of as a liquid and turns solid.!

ReplyDeleteHi Debra, It's breakfast time over here but when I look at the pictures you picked, I could just have some of the chili or a piece of that chicken. Well, I guess I should better be a good girl and grab an apple for now but I'll get the chili out of the freezer for my lunch :-). It's a leftover from a big pot I had made a few weeks ago.

Every one of those recipes looks good to me. I am type 2 diabetes now and having to eat healtier, but I am always hungry. These fresh fruits & vegs and a little meat is not satisfying this active old gal LOL, just like Paula Deen I can't seen to eat in moderation LOL
